Ingredients

1/2 cup sugar
2 cup flour
1/2 tsp salt
2 tsp baking powder
1 tsp baking soda
3-4oz unsweetened chocolate
4 eggs
1/4 cup oil
3 cups shredded raw beets

Instructions

Preheat oven to  325ºF. 

1. Grease two 9-inch cake pans. Whisk sugar, flour, salt, baking powder, and baking soda together.

2. Melt chocolate in a double boiler. Let cool and blend in eggs and oil.

3. Combine flour mixture with chocolate mixture. Mix in beets. Pour into pans and bake until a fork can be removed cleanly from center, 40-50 minutes.
