Brown Rice with Cilantro


Serve this dish for a healthy dose of whole grains with all of your favorite flavors of fresh cilantro, onion, and jalapeno.

1 cup brown rice, rinsed

1 cup water

½ sweet onion, diced

3 cloves garlic, minced

½ jalapeno pepper, seeded and minced

¼ cup cilantro leaves

1 lime, juice of


  1. Heat the rice and water in a sauce pan. Bring to a boil, then cover the pan. Let cook until the water boils off (10-15 minutes), then let stand for another 5 minutes.
  2. Add onion, garlic, jalapeno, and cilantro to rice. Stir for 3-5 minutes, until onions are soft. Squeeze in lime juice, then stir. Remove from heat and serve hot as a side dish.
