1 onion, chopped
1 garlic clove, minced
2 tablespoons butter
1 bunch chard, stems minced and leaves chopped
6 shiitake mushrooms, chopped
6-8 eggs, depending on size
1 cup shredded Gruyere cheese(optional)
1 teaspoon sea salt
Freshly ground pepper to taste
1/2 teaspoon Spanish paprika
1 pie crust


Preheat oven to 400°F.

1. Brown onion and garlic in butter over med-low heat, stirring occasionally for 10-20 minutes. The longer you brown them the sweeter they will get.

2. Add the shiitakes and minced chard stems, and cook for about 5 minutes. Add the leaves to the pan and cook down until wilted about 3 minutes. Remove from heat and allow to cool a little.

3. Beat eggs in a bowl. Mix in the cheese, salt, pepper, and paprika. Add the chard mixture a bit at a time, slowly enough to incorporate it without cooking the eggs. Pour the mixture into pie crust; bake until knife inserted into them comes out clean, 30-40 minutes.
