Cucumber Wakame Salad

Ingredients

1 cucumber, peeled and sliced thin
1 teaspoon salt
2 tablespoon dry wakame, re-hydrated in ample water
1 tablespoon rice vinegar
2 tablespoon sugar
½ teaspoon salt

Instructions

Sprinkle 1 teaspoon salt over sliced cucumber and let stand in bowl for 10 minutes.
Mix together rice vinegar, sugar, and salt.
Squeeze liquid from salted cucumber and place in bowl.
Drain off water from re-hydrated wakame and add to cucumbers.
Pour dressing over cucumber and wakame and mix till evenly dressed.
Serve immediately, or chill and serve cold as a side dish.
