This crisp salad with bowl you over it’s with bright, sweet flavor and it has the added bonus of creamy protein goodness.
1 bulb fennel with stalks and fronds, cut into thin shreds
1 apple (I recommend Fuji), cored and thinly sliced
2 heads of endive lettuce, trimmed and thinly shredded
¼ cup whole white grapes, washed
1 cup crumbled stilton cheese
¼ cup chopped almonds and/or walnuts
2 tablespoons white wine vinegar
2 tablespoons olive oil
Toss together all of the above ingredients in a medium bowl. Serve in small portions.
