Garlic Red Potatoes


Garlic is a healthy staple that can be used in just about any dish to add rich, sweet flavor. Minced garlic transforms your favorite vegetables when they’re baked together.

This simple recipe is made with delicate red potatoes.

4-5 red potatoes cut into chunks

2 tablespoons of olive oil

2 cloves of garlic, minced

1 teaspoon of dried parsley

Salt and pepper

Shredded parmesan cheese, optional


Preheat oven to 350°F.

  1. In a square baking dish, drizzle potatoes with olive oil.
  2. Add garlic, parsley, salt and pepper and stir so potatoes are evenly coated with oil and herbs.
  3. Cover dish with foil and place in oven.
  4. Bake for about an hour or until potatoes are tender when pressed with a fork. Top with shredded parmesan cheese for an extra kick.

Makes 4 servings.
