1 or 2 heads garlic, cloves peeled and sliced
1/4 cup olive oil
2 bunches (about 8 cups) bitter greens, such as broccoli raab, kale, or mustard greens, finely chopped
Sea salt and freshly ground pepper to taste
1. Cook garlic in a medium saucepan over medium heat in oil until lightly browned and crispy (3-5 minutes).
2. Add greens and cook until soft, yet still bright green.
3. Add lemon juice, salt and pepper to taste.
