2 cups packed raw kale and/or leafy greens, trimmed, ribbed and chopped
2 cloves garlic
½ cup extra virgin olive oil
Salt and pepper to taste
½ cup freshly grated Pecorino Romano cheese
1. Add the greens, garlic and nuts to a food processor or mortar & pestle. Blend until coarsely combined.
2. Add the olive oil and mix until fully incorporated and smooth. Season with salt and pepper. Transfer the pesto to a large serving bowl and mix in the cheese.
