Massaged Kale Salad


1 bunch kale, stems removed, cut into thin strips
1 teaspoon sea salt
2 tablespoons seeds or nuts
1 teaspoon honey
Juice of 1 lemon or lime, or 2 tablespoons vinegar
1/4 cup oil (such as olive or sesame)
Pepper to taste
¼ medium-sized red onion, sliced thinly
¼ cup dried cranberries
¼ cup feta cheese, optional


Place cut kale into a large mixing bowl. Add salt and massage for a few minutes until all kale is evenly coated with salt. Taste and add salt as needed. Set aside to wilt slightly.

Place a skillet on medium heat and roast seeds or nuts for 4-5 minutes until golden brown. Set aside to cool.

In a bowl, mix together the honey, lemon/lime juice, oil and pepper to make dressing.

Add dressing, sliced onion, toasted seeds, dried fruit and feta if using to kale and mix evenly. Taste and adjust flavor as needed.

Serving Size:
Makes 4 servings.
