Cucumber Mint Tomato Salad


1 cucumber, peeled
3 tomatoes
2 sprigs fresh mint, chopped
2 tablespoons cilantro, chopped
2 stalks green onion, chopped
1 lime, cut in half
¼ teaspoon salt


Cut cucumber in half length wise and remove seeds. Slice into ¼ inch pieces and place in a bowl.
Slice tomatoes into wedges about the same thickness of the cucumbers and place together in bowl.
Toss in the herbs and green onions.
Squeeze lime juice of one half piece and sprinkle the salt over the mixture and toss together until evenly mixed.
Taste and add more lime juice and/or salt as needed.
Chill in the refrigerator until ready to serve.

Makes 4-6 servings.
