For cake:
4 eggs
1 2/3 cups sugar
1 cup vegetable or olive oil
2 cups cooked pumpkin or squash
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon or 1 tablespoon pumpkin pie spice
1 teaspoon salt
1 teaspoon baking soda

For Frosting:
8 ounces cream cheese, softened
1 cup butter, softened
1 teaspoon vanilla
2 cups powdered sugar, sifted
Chopped nuts (optional garnish)


For cake:

Preheat oven to 350°F.

1. In mixer, beat together eggs and sugar.

2. In the following order, add oil, pumpkin or squash, flour, baking powder, cinnamon, salt, and baking soda, and beat or mix to combine.

3. Pour into ungreased 9"x13" pan. Bake 35-40 min. Allow to cool before frosting.

For frosting:
In mixer, beat together cream cheese, butter, vanilla, and powdered sugar. Spread frosting on cooled cake and top with nuts, if using.
