Quinoa with Snap Peas and Mint


4 cups cooked quinoa
1 cup sliced snap peas
1 tablespoon minced mint
1/4 cup oive oil
3 tablespoons raspberry vinegar (or rice wine vinegar and a bit more honey)
1 clove garlic, minced
1 tablespoon honey
1 tablespoon dijon mustard


Whisk together all ingredients, or add to jar and shake to mix.
