3 medium beets, roasted (approximately 8 ounces)
4 teaspoons tahini
¾ teaspoon garlic powder
4 teaspoons lemon juice
¼ teaspoon ground cumin
½ teaspoon salt
Fresh ground black pepper, to taste
2 teaspoons olive oil
¼ cup + 2 tablespoons water
1. Combine beets, tahini, garlic powder, lemon juice, cumin, salt and pepper in the bowl of a food processor or high speed blender.
2. Process until mixture is well combined. With processor running, slowly add the olive oil through the feed shoot. Watch the consistency of the hummus at this point and add water until smooth and creamy.
