This is a quick, easy side that pairs well with various Asian cuisine dishes. Just be certain to rinse the Bok Choy well, as it tends to collect sand in its leaves.
2 tablespoons olive oil
3 cloves garlic, minced
4-8 small shiitake mushrooms, cut into eighths
2 tablespoons toasted sesame oil
2 tablespoons soy sauce, preferably low-sodium
¾ pound baby bok choy, quartered
Toasted sesame seeds, optional garnish
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add garlic and let warm for about a minute until fragrant.
- Stir in the mushrooms and sesame oil. Stir until the mushrooms become tender (about two minutes).
- Stir soy sauce into mushrooms. Add bok choy. Stir periodically over a span of about five minutes, or until bok choy centers are tender.
- Salt to taste and garnish with toasted sesame seeds. Serve hot.
