Sauteed Bok Choy with Shiitake Mushrooms


This is a quick, easy side that pairs well with various Asian cuisine dishes. Just be certain to rinse the Bok Choy well, as it tends to collect sand in its leaves. 

2 tablespoons olive oil

3 cloves garlic, minced

4-8 small shiitake mushrooms, cut into eighths

2 tablespoons toasted sesame oil

2 tablespoons soy sauce, preferably low-sodium

¾ pound baby bok choy, quartered


Toasted sesame seeds, optional garnish


  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add garlic and let warm for about a minute until fragrant.
  2. Stir in the mushrooms and sesame oil. Stir until the mushrooms become tender (about two minutes).
  3. Stir soy sauce into mushrooms. Add bok choy. Stir periodically over a span of about five minutes, or until bok choy centers are tender.
  4. Salt to taste and garnish with toasted sesame seeds. Serve hot.
