1 pound fresh strawberries, washed and stemmed
1 cup fresh basil leaves
½ of a red onion
¼ cup grated raw beets (optional)
3 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons butter
1 French baguette, sliced
¾ cup goat cheese
Preheat the oven broiler.
Place the strawberries, basil, onion, olive oil and vinegar in a food processor and pulse until coarsely chopped. Mix in raw grated beet if desired.
Butter the baguette slices and place them on a baking sheet. Put them under the broiler for 3-4 minutes, until golden brown. Butter and repeat on the other side of the slices.
Remove them from the oven and top each one with a spoonful of goat cheese and a spoonful of bruschetta. Serve at room temperature.
