Whiskey Glazed Carrots with Dill

Ingredients

8 large carrots, peeled and cut diagonally

¼ cup inexpensive whiskey

2 tablespoons honey

1 tablespoon olive oil

1 heaping tablespoon chopped dill

Salt and pepper to taste

Instructions

  1. In a large skillet, bring the whiskey to a boil over medium-high heat.
  2. Add the carrots and cover the skillet for about five minutes. Stir occasionally.
  3. Remove cover and boil down whiskey. Reduce heat.  Add honey, olive oil, dill, and salt and pepper to taste. Stir well, and then serve carrots hot.

Makes 4 side servings.
