8 large carrots, peeled and cut diagonally
¼ cup inexpensive whiskey
2 tablespoons honey
1 tablespoon olive oil
1 heaping tablespoon chopped dill
Salt and pepper to taste
- In a large skillet, bring the whiskey to a boil over medium-high heat.
- Add the carrots and cover the skillet for about five minutes. Stir occasionally.
- Remove cover and boil down whiskey. Reduce heat. Add honey, olive oil, dill, and salt and pepper to taste. Stir well, and then serve carrots hot.
Makes 4 side servings.
